Aloo Chop/Potato Fritters

Aloo Chop is a pretty common evening street snack found in every nukad of India. In aloo chop mashed potatoes are tempered with some spices, small balls of this stuffing dipped in batter of gram flour and then deep fried. It is very similar to Batata Vada (mostly famous in western India) and Aloo Bonda (popular snack of southern part of india), while aloo chop is popular in Odisha, Kolkata, Jharkhand, Bihar (mostly eastern part of india). Here I am making Odisha style Aloo chop which is different and unique from other variations due to its stuffing which is spiced with ginger garlic, panch phoran and green chillies. If you want, you can add chopped onions too. You can make a healthier version of this aloo chop by air frying it. This can be a quick snack if you have some leftover boiled potato in your refrigerator. People of odisha usually enjoy aloo chop accompanied by mudhi (popped rice), with their family in the evening. So you can find this snack easily in the streets and homes of Odisha. Aloo chop can be accompanied with any dips or chutneys like green chutney, tamarind chutney or simply with ketchup. Finally I would like to add some tips to make this tasty snack. Boil the potatoes, drain all the water and let it cool down before mashing it, so that there will be less moisture. For better results, you can use a greater to mash it. You can make the batter thick or thin according to your choice. As per my taste, thin coating of gram flour tastes best by adding crispness to the aloo chop. Here 10-15 aloo chops can be made from the listed ingredients. Ingredients:

3 medium potatoes boiled

1 cup besan/gram flour

1 tsp panch phoran

2 tbsp garlic crushed

1/2 tbsp ginger crushed

2 green chilies chopped

a pinch of turmeric

salt as per taste

Oil

water as required










Method:

Mash the boiled potatoes with a help of grater, add salt and mix it properly and keep aside.


Now heat a kadai. Add 2 tbsp oil. Add panch phoran. Let it splutter. Now add green chillies and crushed ginger garlic. Remember to use always crushed ginger garlic instead of ginger garlic paste as it enhances the taste of recipe.


Fry till it gives a nice aroma or until it's done. Keep the flame in medium.Add a pinch of turmeric. Fry it for 30 sec. Now add mashed potato. Give it a proper stir. Let it cool down to room temperature.


After the mixture come to room temperature, make small round balls. Keep them aside. Now for the batter in a bowl take besan. add salt and whisk it before you add water. Add little water at once and mix it properly to avoid lumps. Keep the consistency of the batter little bit thin, not too much runny and not too much thick.


Dip the balls one by one in the batter and deep fry them in a low-medium flame until they turn golden brown. Serve Aloo Chop hot with your choice of chutney and enjoy with your family.
