Corn Fritters

Corn fritters are boiled and smashed corn mix with boiled smashed potatoes, bread crumbs, cornstarch, some Indian spice, then made into balls and deep fried. Who doesn't love snacks? Snacks are the most appealing food items during festive season, B'day parties or even in tea times. If the snack is healthier, then it will be cherry on the top. Nowadays corn is gaining popularity all over the country. You can have it in so many ways. Either you can enjoy the roasted one or you can simply boil it and sprinkle some salt and chili powder. It's ready to go. Here I'm sharing a recipe for corn fritters. Kids to older people in your family are going to love this recipe. I used boiled sweet corn. You can also use canned corn. The ingredients are basically common, like corn, boiled potatoes, besan, corn starch, & bread crumbs. Anyone can make this simple recipe. Among other Indian snacks, this is a unique, yet super delicious snack. With these corn fritters make your tea time or your house party special. Just have it with a cup of tea or sprinkle some chaat masala over it and serve it with ketchup or green chutney. These corn fritters are surely gonna make your pallet amazed. Ingredients:

1 corn boiled

1 medium potato boiled

1 medium onion chopped

2 tbsp corn kernels

2 tbsp bread crumbs (just grind a slice of bread in mixer)

2 tbsp sooji/semolina

1 tsp red chili powder

1 green chili chopped

2 tbsp coriander leaves chopped

1 tsp black salt

salt

oil for deep frying


Method:

Boil the corn until it gets soft. Separate the corn kernels. Keep 2 tbsp kernel aside and grind the rest into corased paste.


Now in a mixing bowl take potato and smashed it. Then add corn paste. Add one by one other ingredients. Mix it properly. Add 2 tbsp corn kernels and mix.


Heat the oil in heavy bottomed kadai. Take small portions of the mixture and give it desired shape. Here i am making it in a cylindrical shape.


Add one by one into the oil. Keep the flame medium. Fry until they turn golden brown.


Serve it with ketchup or mayonnaise or green chutney.
