Curd Rice

Curd rice is a very simple and quick recipe, mainly popular in southern India. It is made by simply mixing soft rice, curd and salt, then tempered with basic tadka. As curd is full of probiotics, calcium and other nutrients, it's a nutritious meal. It's a healthy lunch for kids. Avoid eating curd at night times as it develops cold. You can also make curd rice with leftover rice. For the recipe, use fresh curd. If the curd is sour, add milk to it to balance the taste. It can be made in less than 10 minutes, if you have your rice ready. You can add this recipe to your lazy day menu. Curd rice is the best dish for bachelors or hostelries and you don't need to compromise with your taste either.

Ingredients:

1/2 cup regular rice

i cup curd

1 string curry leaves

1 tbsp ginger grated

1 green chilli chopped

1 tbsp channa daal

1 tsp mustard seeds

1/2 tsp cumin seeds

1 pinch hing

1/4 cup chopped carrot (optional)

salt as per taste

oil





Method:

Cook your regular rice slightly overdone. Let it come to the room temperature. Then add curd and salt. Mix it properly and keep aside.


Now we will prepare the tempering. Heat a tadka pan. Add 2 tbsp oil. Add mustard seeds, cumin seeds, hing. Let the seeds splutter.


Add curry leaves, green chilli, channa daal, ginger garlic paste and chopped carrot. Add a pinch of salt. Saute it for 2 minutes. Keep the carrots crunchy.


Off the flame. Add the tempering/tadka to the rice and mix properly. Serve it slightly hot.
