Egg Bhurji Masala Roll


Rolls and Indian street foods share a very special bond. You can find so many varieties of rolls in street food markets. Rolls are a happy meal for every age group. I would rather say roll is just a hangout meal, after lecture hunger filler or just an evening snack. Egg roll is an easy snack recipe that can be fried, baked or cooked on tawa. As this egg bhurji roll is loaded with stuffing, it can satisfy your hunger. You can also add ingredients as per your choice. This egg bhurji roll is non messy, loaded with lots of protein and convenient to carry to picnics, parties and lunch boxes. Here I am using a unique egg bhurji in this egg roll. You can use just a simple omlate also. You can use wheat flour instead of plain flour to make it more healthy. Make this egg bhurji roll for your family and guests and let them shower you with and compliments.


Ingredients:


For Egg Bhurji Masala:

4 Eggs

2 medium onion chopped

1 large tomato chopped

1 tbsp crushed ginger garlic

1 green chili chopped

1 tsp turmeric powder

1 tsp red chili powder

2 tsp chicken masala

1 tbsp tomato ketchup

2 tbsp oil

salt as per taste


For Roll Wrapper:

1 1/2 cup maida

1 tbsp sugar

2 tbsp curd (optional)

salt per taste

2 tbsp oil

water as required



For Topping:

1 large onion thinly sliced

1/2 lemon juice

1 green chilli chopped (optional)


Recipe:


To make the egg bhurji beat the 4 eggs with little bit salt and black pepper and keep aside. Meanwhile, In a bowl mix onion, lemon juice and green chilli for the topping.


Heat the kadai/pan, add oil. Then add chopped onion and green chili. Keep the flame in medium-low.


Let the onion turn translucent. Then add crushed ginger garlic, turmeric powder and red chili powder.


Fry for 2 minutes and then add chopped tomatoes, add little bit salt. Then cover and cook for 7 to 8 minutes in low flame.


Then add chicken masala and tomato ketchup. At the point turn the flame to high and saute for 2 to 3 minutes.


Now turn the flame to low and add eggs to the masala. Mix it well in high flame for another 2 to 3 minutes.


Making of wrappers:

Take plain flour/maida, salt, sugar, curd, oil in a mixing bowl. By adding little water at a time, knead it to a soft dough .drizzle little bit oil all over the dough and spread it all over. Leave it for 20 minutes by covering with a wet cloth.


Now roll it into thin sheets. Instead of using flour, use oil to roll it.


Heat a tawa. Put 2 tbsp oil. Spread it all over the tawa. Now put one sheet and add little oil over it. Tap the sheets with a spatula all over while frying in oil. Fry till the side turns light golden. Now turn the other side and cook in same manner.


Fry all the four sheets in the same way. Fill with stuffing. Over the stuffing put onion and green chilli . Then add tomato Ketchup. Roll it up. Serve hot.
