Masala Egg Bhurji

There are some vegetarian people and some non vegetarian people but here in India we have our own type that is Eggitarian. The people who can have eggs but no other seafood or meat. So here’s a great easy and quick recipe for our eggitarian friends and for all the others as well. As we all know egg is a very good source of protein and its easily available to anyone too, So making this masala egg bhurji is a no sweat. We are going to need some very regular and basic ingredients for this. Which are some ginger, garlic, some onions, tomatoes, a little bit of tomato ketchup and of course some eggs. Masala Egg Bhurji is basically the Indian version of scrambled eggs. You can make Paneer bhurji or tofu bhurji as well by just substituting the eggs. But masala egg bhurji is the most loved bhurji by we Indians. This dish is so simple to make that is very popular among school and college students who cook their own food. If you have no time to cook but need the stamina for the whole day, masala egg bhurji is the recipe for you. You can sandwich it, eat it with roti or paratha as a side dish, wrap it in tortia, enjoy it with just plain steamed rice or you can eat it as it is as breakfast. There are so many ways that you can enjoy this masala egg bhurji. Just beat some eggs toss it with your favorite veggies and some spices and your fully protein packed meal is ready. Ingredients:

Here I am sharing the recipe for 2 servings. You can adjust the quantity of ingredient as per your requirements or taste.


4 Eggs

2 medium onion chopped

1 large tomato chopped

1 tbsp. crushed ginger garlic

1 green chili chopped

1 tsp. turmeric powder

1 tsp. red chili powder

1 tsp. black pepper powder

2 tsp. chicken masala

1 tbsp. tomato ketchup

2 tbsp. oil

salt as per taste

2 tbsp. coriander leaves chopped



Method:

To make the egg bhurji beat the 4 eggs with little bit salt and black pepper and keep aside.

Heat the kadai/pan, add oil. Then add chopped onion and green chili. Keep the flame in medium-low.

Let the onion turn translucent. Then add crushed ginger garlic, turmeric powder and red chili powder.

Fry for 2 minutes and then add chopped tomatoes, add little bit salt. Then cover and cook for 7 to 8 minutes in low flame or until the tomatoes gets soft.

Then add chicken masala, give a satire for another minute and then add tomato ketchup. At the point turn the flame to high and sauté for 2 to 3 minutes.

Now turn the flame to low and add eggs to the masala. Mix it well in high flame for another 2 to 3 minutes. Finish it with chopped coriander leaves. Serve hot with chapatti or rice or enjoy it as it is.
