Poori wale rasedar aloo sabji / Aloo curry without onion and garlic

This Aloo curry without onion and garlic will take you only 10 minites to prepare. This is the quickest and yummiest recipe i have came across. This aloo curry recipe is inspired by one of my friend. During my hostel life when there is only limited time and ingredients, for festivals we used to make this aloo curry. While fasting all day long on the auspicious occasions like maha shiva ratri or during navaratri, Hot poories and yummy aloo curry always make a perfect combo to celebrate this festivals. You can make this recipe anytime though and everyone will definitely love it. This aloo curry can be enjoyed with hot chapattis or steamed rice also. Along with this a bowl of kheer will do the magic. Thoes who love to explore Indian cuisine can try this basic recipe for a must.


Ingredients :

2 boiled potatoes 2 medium tomato chopped 1 tsp pancha phoran A pinch of hing 1/4 tsp turmeric powder 1 tsp red chili powder 1 tsp Kashmiri chili powder 1 tsp cumin powder 1/2 tsp coriander powder Chopped coriander leaves Salt as per taste Oil 1 1/2 cup water

Method:

Put a kadai on medium flame. Add oil. Add pancha phoran and hing.


Let the spices splutter. Then add chopped tomatoes. Add little bit salt. It will help to cook the tomatoes. Now cook it over low medium flame until the tomatoes become soft.


Now add turmeric powder, red chili powder, cumin powder, coriander powder. Give it a stir.


After 2 minutes roughly mashed the potatoes and add it. Mix it properly. Pour water. And let it simmer on low flame for another five minutes. You can also adjust the consistency of the gravy according to you taste.


Finish it with chopped coriander leaves. Serve hot with poori or chapatti.
