Prawn Ghee Roast

Have you ever been to Mangalore? If you have, then you must have tasted the most popular Mangalorean dish Prawn Ghee Roast or Chicken Ghee Roast. Prawn Ghee Roast is just the derivation of Chicken Ghee Roast. You can also make this dish with any seafood, egg or paneer. So in that way any one can taste this legendary dish. The authenticity of the dish comes from the whole spices that are used in this recipe. For this Prawn Ghee Roast you have to roast some whole spices then grind them with whole chilies and tamarind. So the dish is little bit spicy, tangy and incredibly tasty. I have used Byadagi chillies here, but you can replace byadagi chillies with Kashmiri red chillies. As per the name this Prawn Ghee Roast requierd a lots of ghee. So you can smell the wellness of ghee and the magic aroma of spices. This is an authentic Mangalorean dish. So I hope you can get the taste of Mangalore at your home on your plate. It is really a quick recipe to make if you have already the spices being roasted, grounded and stored in your kitchen. Don't ever compromise with the spices quantities as it is very much important to give the dish the best kick. You can have the Prawn Ghee roast with simple dishes like neer dosa, steamed rice or parota. So give this Prawn Ghee Roast a try and Enjoy the taste of Mangalore at your home. You can also make Chicken Ghee Roast or Egg Ghee Roast or Paneer Ghee Roast as per your choice.



Ingredients :

For roasting spices:

Coriander seeds - 2 tbsp

Mustard seeds - 1 tsp

Cumin seeds - 1 tsp

Whole black pepper - 1 tsp

Fenugreek seeds - 1 tsp


For the paste:

Whole byadagi red chillies/Kashmiri red chillies- 10-12 nos.

Tamrind paste - 2 tbsp

Cashews - 4-5nos.(optional)

Garlic cloves- 7-8 nos.

Jaggery - 1tbsp

Little bit water


For marinade:

Prawn - 400grms

Lemon juice - 2 tbsp

Turmeric powder - 1/2 tsp

Salt as per taste


Other ingredients :

Ghee - 5 tbsp

Curry leaves - 2 string

Salt as per taste


Method:

Step-1

To prepare the prawn, first de vein the prawn and wash thoroughly. In a bowl take the prawns and add, lemon juic, salt, turmeric powder.


Mix it well and keep it aside atleast for 15 minutes.


Step-2

Now for roasting the spices take a pan and heat it properly. Now lower the heat. Add the whole spices one by one.


Roast the spices on low heat untill the nice aroma comes out.


Now switch off the flame and let the spices cool down.


Step-3

Take the whole chillies and de seed them. In a bowl soak the chillies and cashews with hot water at least for half an hour.


Step-4

In a mixer bowl take the soaked red chillies, roasted whole spices, garlic cloves, jaggery and tamarind pulp. Add a dash of water and grind it into a fine paste.


Step-5

Heat a pan. Take 3 tbsp ghee. Add masla. Fry in low flame untill oil separates from the masala.


In between in a other pan take 2 tbsp ghee. Heat the pan well. Add the prawns. Cook the prawn for 3 minutes. Don't overcook the prawn otherwise prawns will turn chewy.


Add little bit hot water to the masala. Adjust the consistency as per your choice.


Now add the prawns into the masala. Mix it well. Cook the prawns in the masala well. Turn the heat high add curry leaves and fry for 2 minutes.


In this stage taste for the salt and adjust the salt as per your taste. Now switch off the flame.


Serve the hot prawn ghee roast with neer dosa, appam or steamed rice.
