Shahi Paneer

Shahi paneer is a famous Mughlai cuisine, found on almost every Indian restaurant's menu. This recipe consists of Indian cottage cheese prepared in a thick gravy which is a mixture of nuts, cream or curd, onion, tomatoes and some Indian spices. As the name refers, shahi paneer is very royal and rich in taste. This recipe has various ways of preparation. Here I'm using the easiest way to prepare shahi paneer, yet the tastiest one. You can make this restaurant style shahi paneer whenever you receive unexpected guests, at the shortest time limit. As you know paneer /Indian cottage cheese is full of protein, it's a healthy recipe too. Along with the kids, the whole family will become fans of this restaurant style shahi paneer. This can be accompanied by Indian flat bread like butter naan, tandoori roti, lachha paratha, plain paratha or rumali roti. It can be a hit duo with plain steamed rice.


Ingredients:

200 gms paneer cut into cubes

2 medium onion roughly chopped

1 medium tomato roughly chopped

10-15 cashews

1/2 cup cream (you can use milk as a substitute of cream)

1 tbsp coriander powder

1/4 tsp turmeric powder

1 tsp chilli powder

1 tsp kasoori methi

1 tsp garam masala powder

1/4 tsp green cardamom powder

2 tbsp butter

salt as per taste

oil




Method:

Fry the paneer cubes in oil for 1-2 min on medium flame and keep it aside. Keep it soft, don't make it crispy.


Heat a pan. Add oil. Now add onions, cashew nuts. Saute for few minutes. Add tomatoes, saute for 5 minutes on low-medium flame.


Then add red chilli powder, turmeric powder, coriander powder and salt as per taste. Saute for another 2-3 minutes or until the tomato cooks well.


Now cool this masala and grind into a smooth paste by adding 1-2 tbsp water to it.


Heat the same pan. Add butter. Transfer the mixture paste to the pan. Cover and cook on low flame for 10 minutes.


Now add 1/2 cup cream. You can use full-fat milk as a substitute of cream. Add paneer cubes into the gravy.


Add garam masala powder, green cardamom powder and kasoori methi. Cook on low flame for another 3 minute. Garnish with some cream and serve hot with your favorite flat indian bread or rice.
