Tomato Poha

Poha is mainly flattened rice or beaten rice tempered with onion and some Indian spices. It's a very popular breakfast in the western part of India. This poha or beaten rice is parboiled so it is easily digestible and also needs no cooking to medium cooking. You can consume it without cooking like you can rinse it with water till it gets soft and add some curd, sugar, fruits and you are ready to go with your breakfast. Poha is a quick and simple dish. This Tomato Poha can be a healthy breakfast or a quick snack. Maybe it will not be perfect on your first attempt, but as you prepare it two to three times you will fall in love with this poha. Tomato poha is made with some onion, more tomatoes, and some Indian spices. Many people prefer to add potatoes and vegetables to this dish. If you are doing so, then cut the vegetables into small cubes. Be careful while cooking poha. Avoid making it mushy. I would love to add roasted peanuts as they enhance the texture of the poha and give you a nice crunch in every bite. Top the poha with some coriander or a few drops of lemon juice and serve it hot. This Tomato Poha doesn't need any companion as it alone can give your taste buds a nice flavour, but you can enjoy your tea following the dish. This simple dish is very convenient to carry in lunch boxes. Poha, on the other hand, is the healthiest choice of breakfast as it is rich in healthy carbohydrates, iron, probiotics while low in calories. So try this Tomato Poha as soon as you can.



Ingredients:

1 cup poha ( medium to thick beaten rice )

1 medium onion chopped

2 medium tomatoes chopped

1 green chilli chopped

1 tsp cumin seeds

1 tsp mustard seeds

a pinch hing /asafetida

1 tsp turmeric powder

2 tbsp roasted peanuts

1 string curry leaves

Few drops lemon juice (optional)

coriander leaves for garnishing

mustard oil

salt as per taste


Method:

Wash poha with water. Let it become little bit soft. Keep it a side. Use a strainer to rinse poha. Don't keep it in water for more time as it will become mushy. To check the poha, it is soft or not, press it in between your fingers it should break easily. Always use medium to thick beaten rice. Don't use a thin one.


Heat a kadai. Add mustard oil. You can use anytype of oil, but mustard oil gives the dish a nice flavour. Add cumin seeds, mustard seeds. Let it splutter.


Now add hing, curry leaves, green chilli, onion, tomatoes. Add little bit salt, turmeric powder and cook on medium flame for 5-7 minutes. I personally like to keep onions little bit crunchy.


Add poha and roasted peanuts. Put little bit salt, keeping in mind salt is already added before. Mix properly. Saute on medium-high flame for 2 minutes.


Turn off the flame. Add a few drops of lemon juice (optional). Garnish with coriander leaves and serve this tomato poha hot.
